Our Daughter, Nicole, always
requests this for holidays.
1 loaf(1 lb.) day-old white bread, cut into 1/2-inch cubes
1/3 cup butter or margarine
1/2 cup chopped onion (about 1 medium)
1/2 cup chopped celery
1/4 cup chopped celery leaves
2 tablespoons chopped fresh parsley(*or 1 tablespoon dried,
...added after mixing veggies with bread)
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups milk
2 eggs (lightly beaten)
3 cups chopped apple,red delicious(about 2 medium)
1/4 cup raisins
Preheat oven to 375°F.
Grease a 6-cup baking dish.
Bake bread cubes til dry and lightly toasted (about 5 minutes).
Transfer to a large bowl and lower oven to 350°F.
Melt butter in saucepan. Stir in onion, celery, celery leaves,
parsley*, salt and pepper. Cook and stir for about 3 minutes.
Pour over bread. Add milk and eggs. Stir to moisten. Gently
stir in apples and raisins. Spoon into prepared baking dish. Cover.
