LO-FAT, LO-CAL BANANA PUDDING
This actually tastes like regular banana pudding!!
3/4 cup sugar substitute, that measures like sugar
1/3 cup all purpose flour
dash salt
Egg substitute to equal 4 eggs
2 cups skim milk
1/2 teaspoon vanilla
Lo-fat vanilla wafers
Bananas
Combine sugar substitute, flour, salt. Stir in egg
substitute and milk. Bring to a full boil and boil
for 2 minutes, stirring constantly. Remove from
heat. Add vanilla.
Layer in a bowl or trifle dish as follows:
Wafers
Banana slices
Half the pudding
Wafers
Banana slices
Remainder of pudding.
Can be served as is, warm or chilled or you can
top it with meringue and bake at 350° F.
until the meringue browns.
