6 tablespoons butter
1 cup chopped onion
1 clove garlic, minced
1 cup uncooked rice
2 1/2 cups chicken broth
2 tablespoons chopped parsley
1/4 cup raisins (preferably golden)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup pine nuts or chopped walnut
Melt 4 tablespoons butter in a small skillet.
Add onion and garlic. Sauté til golden. Pour
into a 2 quart casserole. Add rice, broth,
parsley, raisins, salt and pepper. Stir well.
Cover, bake at 375°F. for 30 minutes, until
liquid is absorbed. Brown nuts in remaining
butter. Fluff rice and stir in nuts just before serving.
