SHIRLEY'S RICE PILAF
Measurements approximate
Serves 6
1 1/2 cups rice
3 1/2 cups + 2 tablespoons water
3/4 teaspoon salt
4 tablespoons or 4 cubes chicken bouillon
1 tablespoon butter or margarine
1/4 cup diced carrot
1/8 cup diced onion

Bring water to a boil in a large saucepan.
Stir in remaining ingredients. Reduce heat.
Cover and simmer for 20 minutes. Remove from heat.
Let stand, covered, 5 minutes or until water is
absorbed. Fluff with a fork and serve. 1
