Mix butter and eggs together. Add sweet potatoes, sugar
and milk to the butter and eggs. Stir until well blended.
Add vanilla and mix well. Pour into a greased 2 quart casserole dish.
TOPPING
1 cup brown sugar
1/2 cup all-purpose flour
1 cup pecans, chopped
1/3 cup butter, melted
Mix brown sugar, flour and pecans together. Pour butter
over the mixture and stir well. Crumble over the top of the
casserole. Bake at 359°F. for 30-40 minutes or until
topping is well browned.
** I really prefer mine without the sugar. It tends to make
the casserole too sweet.
