1 3-4 pound corned beef brisket
3/8 cup prepared mustard
1/2 cup brown sugar
whole cloves
gingerale (about 1/4 to 1/3 cup
Wash brisket and place on a rack in roasting pan
fat side up. Cover with foil and cook at 350°F. for
2 1/2 to 3 hours until fork tender.
Remove from oven, score meat on fat side.
Baste brisket with gingerale. Mix mustard and brown sugar.
If necessary, add a little gingerale to make mustard mixture
proper basting thickness. Place cloves in scores and baste
well with mustard mixture.
Return meat to oven, uncovered, for another 30-45 minutes,
basting at least once more. Remove from oven and let stand
15 minutes. Slice across the grain.
