PAUL PRUDHOMME'S OVEN FRIED CATFISH
4 servings

SEASONING MIX:
1 1/4 teaspoon garlic powder
1 teaspoon each:
...salt
...onion powder
...basil leaves
1/2 teaspoon each:
...paprika
...black pepper
...white pepper
...oregano leaves
...cumin
1/8 teaspoon cayenne

4 catfish fillets (4-5 oz.each)
1/2 cup toasted bread crumbs
2 tablespoons minced fresh parsley
3 tablespoons minced green onions
1 tablespoon olive oil

Combine seasoning mix in a small bowl.
Preheat oven to 450°F.
Sprinkle all surfaces of fish with 4 teaspoons
of the seasoning. Combine crumbs, parsley, onions,
and remaining seasoning in a bowl. Add oil and mix with
fingers til moist. Dredge fish, pressing down gently.
Shake off the excess. Place on a nonstick baking sheet,
presentation side up, and cook 6 minutes.
Turn and cook 6 minutes. Turn and cook 4 minutes.
