TAHITIAN TURKEY
(One of my inventions...great for
leftover turkey and giblet gravy.
A bit unusual and "Island-y")
1 tablespoon oil and 1 tablespoon butter
1-2 carrots, thinly sliced
2 ribs celery, chopped
4 or 5 coarsely chopped green onions, with tops
1 cup diced cooked turkey
1/4 cup raisins
1 cup or more leftover giblet gravy
1 large or 2 small sliced semi-ripe bananas
Heat skillet, add oil and butter. Saute´ vegetables til
crisp-tender. Add turkey, raisins and gravy. Heat through.
Add bananas. Stir and serve.
