SHIRLEY'S CARROT RAISIN SALAD
One of my own inventions.

2 cups grated carrot (about 4 large carrots)
1/2 cup raisins
3/4 cup drained pineapple tidbits
1/2 cup mayonnaise
1/2 teaspoon prepared mustard
1/8 teaspoon salt
1/8 cup pineapple juice

Mix mayonnaise, mustard, salt and pineapple juice.
Add to carrots, raisins, and pineapple. Mix well, and let set
for up to 24 hours before serving so the flavors meld. 1
