4 sweet potatoes
1/2 cup vegetable oil
4 tablespoons maple syrup
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
Wash potatoes, cut in half, then cut each half into 3 wedges.
Heat oil in medium skillet over medium-high heat. Cook potatoes
until crisp and brown. Drain on paper towels. Place on a cookie
sheet in a 200°F. oven. In a shallow bowl, combine the
syrup, nutmeg and cinnamon. With a pastry brush, coat wedges
with syrup mixture....makes about 6 servings.
