JALAPEŅO CHILI
1/2 pound lean pork -- cubed
1 pound ground beef
3 cups onions -- chopped
1 cup bell pepper -- chopped
1/2 cup celery -- chopped
1/2 cup flour
1 quart water
1 cup tomato sauce
1/2 cup tomato paste
6 tablespoons chili powder
3 tablespoons pickled Jalapeņo peppers -- chopped
2 tablespoons comino seeds
1 teaspoon garlic powder
1 (10 ounce) can beer
Salt and pepper
In a large heavy pot brown ground meat and pork without
using fat. Add onions, bell peppers and celery. Cook until
onions are wilted. Mix the flour with a little of the water;
add the flour mixture, water and all remaining ingredients
to the pot. Simmer, stirring often, on medium heat for
3 1/2 to 4 hours.
