SHIRLEY'S CHILI CREATION
As with all my recipes, the measurements are approximate.
2 strips bacon, diced
1 bell pepper, chopped
1 onion, chopped
3 cloves garlic, diced
1 1/2 pounds lean ground beef
1 can chopped tomatoes
1 can tomato sauce
1-2 teaspoons cumin
1 teaspoon salt
2-3 tablespoons chili powder
1/2 teaspoon ground cloves
freshly ground pepper
2 tablespoons cornmeal
Tabasco sauce to taste
1 bottle of beer (non-alcoholic beer
may be used)
Fry the bacon pieces in a hot iron or other
heavy deep skillet or dutch oven. Add the
bell pepper and onion and cook, stirring
often, til just beginning to brown. Add
garlic and ground beef and cook, stirring
occasionally until the beef is browned.
(I like to brown mine very well to where
it is sticking to the bottom of the pan, then
deglaze the pan with a little beer.) Add
the rest of the ingredients, tasting to see
if the measurements are correct. You may
need to increase the measurements. Cook
over low heat at least 30 minutes, stirring
occasionally to keep from sticking.
