MOCK WHIPPED CREAM
(about 4 cups/ 3 calories per tablespoon)
Prepare at least one hour in advance.

1 1/2 teaspoons unflavored gelatin
1/4 cup boiling water
1 1/2 teaspoons honey
1 cup ice water
1/2 cup instant nonfat dry milk
2 teaspoons vanilla

Chill a large bowl and beaters.
Dissolve gelatin in boiling water.
Stir in honey.

In chilled bowl, beat together ice water,
dry milk and vanilla until very frothy.
Gradually add gelatin mixture and continue
beating til very stiff. Chill at least one
hour before using. 1
