LO-FAT CANDIED YAMS
Makes 6 servings
2 pounds yams (4 or 5), pared,cut in 1/2" slices
1 medium apple, pared, sliced
1/2 cup packed, brown sugar
1/8 teaspoon cinnamon
Dash salt
2 tablespoons apple juice
Cook yams til tender but not soft. Drain.
In 8x8x2" baking dish, combine yams and apple.
Sprinkle with brown sugar, cinnamon and salt.
Drizzle with apple juice. Bake at 350-degrees,
covered, for 35 to 40 minutes. Stir occasionally
to distribute the glaze.
