SNICKER DOODLES



A favorite for fall, or any time of the year!
Kids especially enjoy getting messy and producing delicious cookies at the same time!

1 cup butter or other soft shortening
1 1/2 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract
2 3/4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cream of tarter

2 tablespoon granulated sugar
2 tablespoon ground cinnamon

In a large mixing bowl, soften the butter, add sugar, and cream together. Add the eggs, then add the vanilla, beating until well mixed. In a separate bowl, mix or sift together the flour, salt, baking soda and cream or tarter. Dump half of the flour mixture into the egg mixture. Stir together. Add rest of flour mixture, stirring until the batter is sticky and light yellow. Mixture will be very stiff. Cover the bowl and refrigerate for at least one hour (may be made days ahead and refrigerated). Mix the sugar and cinnamon in a small dish.

Preheat oven to 400 degrees. Take scoops of the cookie dough about the size of a walnuts and roll them into balls. Roll the balls in the cinnamon-sugar until coated, and place on baking sheet about two inches apart. Bake for 10 minutes, until the edges begin to brown. Cookies will flatten out and crackle on the top. Do not overcook!

It's hard to resist these cookies warm from the oven!! So go ahead, snicker, and enjoy!!!
