Chilli Plum Beef with Vegetables

6 1/4 kilograms beef eye of round -- one piece
1 1/4 liters plum sauce -- 1 bottle
1 1/2 cups soy sauce -- dark
25 cloves garlic -- crushed
1/3 cup fresh ginger -- grated
1/3 cup red chiles -- chopped
1/3 cup sugar
1/3 cup dry sherry
1/2 cup cornstarch
1 1/2 cups oil
1 1/8 quarts water
1/3 cup cornstarch -- extra
8 1/3 packets beef stock -- cube
8 1/3 whole Carrot -- thinly sliced
25 sprigs celery -- sliced 1/4" thick
8 1/3 whole green pepper -- thinly sliced
8 1/3 whole red pepper -- thinly sliced
Method:
1. Trim Beef, slice thinly. Combine beef, sauces, garlic, ginger, chilli, sugar, sherry and cornflour in large bowl, mix well cover, marinate 30 minutes or regrigerate overnight.
2. Heat a little of the oil in a wok, add beef, about a quarter at a time, stir-fry few minutes, or until browned. Remove from wok as it is cooked; repeat with remaining oil and beef.
3. Blanch the vegetables in hot boiling salted water for two minutes. Empty the vegetables in an ice bath. Drain. Stir fry the vegetables in little oil until crisp and tender. Remove from wok.
3. Return beef to wok wth remaining marinade, blended water and extra cornflour and crumbled stock cube. Stir until mixture boils and thickens. Stir in the vegetables.

4 beef eye round steaks -- cut into 1/2" pieces
1/4 cup water
3 tablespoons hoisin sauce
1 tablespoon red wine vinegar
Vegetable oil
1 small peeled and seeded cucumber -- halved and sliced
1 small red bell pepper -- cut into thin strips
1/4 cup sliced green onion
3 ounces cooked Chinese noodles -- broken and drained
4 teaspoons chopped fresh cilantro -- divided
Combine water, hoisin sauce and wine vinegar; reserve. Heat large nonstick skillet over medium-high heat. Brush skillet lightly with oil. Add cucumber, bell pepper and green onion; cook and stir 1 minute. Stir in noodles, 1 tablespoon cilantro and half of reserved hoisin mixture. Remove to warm platter. Heat same skillet over medium-high heat until hot. Panbroil beef eye round steaks 2 to 4 minutes, turning once. Do not overcook. Add remaining hoisin mixture to skillet, turning steaks to coat.
NOTES : To serve, place steaks on noodle mixture. Spoon warm sauce over steaks. Sprinkle with remaining 1 teaspoon cilantro.

6 ounces waterchestnuts, canned
2 eggs
1/4 cup milk
1 pound ground beef
1/2 cup chopped onions
2 tablespoons chili sauce
2 tablespoons soy sauce, low sodium -- to taste
1/4 teaspoon pepper
3 ounces Chow mein noodles -- crushed
Drain water chestnuts; chop.
Beat 1 egg and milk in bowl. Add ground beef, onion, sauces, pepper and water chestnuts; mix well. Form into balls. Beat remaining egg with 2 tablespoons water. Dip meatballs in egg mixture; roll in crushed noodles. Fry in deep, hot fat until golden brown.
Recipe can be doubled.

500 grams Beef eye of round -- sliced finely
1 teaspoon teriyaki sauce
1 clove garlic -- crushed
1 teaspoon grated ginger root
2 teaspoons corn flour
2 teaspoons corn flour -- extra
1/2 cup dry sherry
1 tablespoon soy sauce -- light
1 tablespoon oyster sauce
1/4 cup water
1 tablespoon lemon juice
1 tablespoon sugar
2 tablespoons oil
1 large onion -- sliced
1 medium carrot -- sliced
1 medium green pepper -- sliced
1 medium red pepper -- slcied
Method:
1. Combine beef in bowl with teriyaki sauce, ginger, garlic and cornflour, stand 30 minutes.
2. Blend extra cornflour with sherry, soy sauce, oyster sauce, water, lemon juice and sugar.
3. Heat one tablespoon of the oil in wok, add beef in batches, stir-fry over high heat; drain.
4. Heat remaining oil in wok. Add onion and carrot, stir-fry few minutes or until just soft, add peppers, stir-fry 2 minutes, add beef.
5. Add sherry mixture to wok, stir until sauce boils and thickens.
NOTES : 1. Lamb, chicken, pork or shrimp can be used instead of beef. Change cooking time as required.

3 tablespoons dry sherry
1/2 cup oyster sauce
1/4 cup water
1/2 teaspoon red pepper flakes -- crushed
2 tablespoons oil -- * see note
1 tablespoon ginger root -- minced
1 garlic clove -- crushed
1 pound broccoli stalks -- sliced
and flowerettes
2 celery stalks -- diagonally cut
1/4 cup waterchestnuts, canned -- chopped
6 green onions -- diagonally cut
1 green bell pepper -- julienned
1 red bell pepper -- julienned
2 cups cooked beef -- cut in 1 x 3" slice
* Use your choice of oils, or use canola or peanut oil with dash of sesame oil added.
Prepare all vegetables and meat before beginning to cook this recipe. In small bowl, combine sherry, oyster sauce, water, pepper flakes and the cornstarch. Mix well.
1. Heat pan over medium heat and add the oil.
2. Stir in ginger and garlic and stir-fry one minute.
3. Add broccoli; stir-fry 3 minutes.
4. Add red and green peppers, celery and green onions; stir-fry 3 minutes.
5. Add sherry-cornstarch mixture and the cooked beef; stir-fry 3 minutes.
6. Add the water chestnuts and stir-fry one minute more.
Szechwan Beef Stir-Fry

1 pound beef flank steak -- well-trimmed
2 tablespoons Oriental dark-roasted sesame oil -- divided
2 tablespoons reduced-sodium soy sauce
1 1/2 teaspoons sugar
1 teaspoon cornstarch
1/4 teaspoon crushed red pepper pods
2 cloves garlic -- crushed
1 tablespoon fresh ginger -- minced
1 small red bell pepper -- cut into 1" pieces
1 small can whole baby corn
4 ounces snow pea pods -- julienned
Partially freeze beef flank steak to firm (approx. 30 minutes). Cut steak in half lengthwise; cut each half across the grain into 1/8-inch thick strips. Combine 1 tablespoon sesame oil, soy sauce, sugar and cornstarch; pour over beef strips, tossing to coat. Heat remaining sesame oil in wok or large nonstick skillet over medium-high heat. Add pepper pods, garlic and ginger; cook 30 seconds. Add bell pepper and corn; stir-fry 1 1/2 minutes. Add pea pods; stir-fry 30 seconds. Remove vegetables from pan; reserve. Stir-fry beef strips (half at a time) 2 to 3 minutes. Return vegetables and beef to pan and heat through.
Serving Ideas : Serve immediately.
