SPICE DICTIONARY

Pasta al'Olio

*cook pasta till al dente
*fry garlic in olive oil
*put together pasta and garlic, spice with salt and pepper
*serve with salad

Rice al'Roman

*cook rice
*fry onion
*spice the onion with loveage, salt, entire coriander
*optionally: put one tin of peas, beans, corn etc. into it
*mix with the rice

Captain's Afghan Gulyash

*fry onion
*add a tin of tomatoes
*add water
*spice with curcuma (a orientalic spice ; yellow ; a part of Curry, but very different taste ; also called Turmeric), salt
*add ready cut potatoes
*cook till potatoes are ready

Captain's Paprika Gulyash

*fry onion
*add a tin of tomatoes
*add water
*add ready cut paprika
*spice with salt, bay leave
*cook till paprika is soft
*serve with rice or potatoes
 

Captain's Roman Chicken

*fry chicken breast short on both sides
*fry onion
*spice with loveage, entire coriander, salt, laurel leave
*add some water
*put chicken breast into it
*cook 20 minutes at low heat
*serve with bread, rice or potatoes
 

Gnocchi al Captain

*boil italian gnocchi
*add pesto (italian spice mixture)
(*add boiled broccoli)
*serve with salad
 

Captain's Roman Beans

A ancient roman recipe

*fry onion in olive oil
*add a tin of red beans (beans in a water/sugar mixture ; otherwise add some sugar)
*spice with loveage, cumin, coriander, salt, pepper
*serve with bread

Tomato Soup.

            1 medium onion,finley chopped.            1 clove garlic, chopped.
            oil                                                           2tsp cornflour.
            1tsp salt                                                 2tsp sugar.
            ¼ tsp paprika                                        ½ cup hot water.
            500g ripe tomatoes, chopped...you can skin them if you want...

            Cook onion and garlic in oil till transparent...
            Add rest of ingredients...
            Cook till clear and slightly thickened...
 
 

Sometimes I chop some celery thinly and cook with onions...or add some corn,
or peas if you like...
You could add some saveloys...
you will probably have something similar...it is the same size as a sausage...the uncooked kind made from ground ..mutton..beef or pork..the ones that you would usually fry to cook...
A savaloy...is already partially cooked and is often smoked...
Wonder if you can understand all that...
If you do.. I chop some and add till it is heated...depends how hungry you are and
how much money in your pocket...


Another Topsy One..
2 servings...

 Cook some pasta...macaroni, shells,kiferi,lisci,or perciatelli...
            1cup pasta ,garlic salt, 1½cups boiling water...
            cook till tender...add some grated cheese and a sprinkle of flour...
            to this you can add any vegetables you like..
            I often add some smoked fish...

            by the time the pasta is tender most of the water should be absorbed...
            Doesn't matter if there is a little water left...the sprinkle of flour will
            thicken it...if you have no flour just cook a little longer...
 
 

Chicken & Pineapple...
            1 can of pineapple...450g...                    1 pkt cream of chicken soup
            2tsp soy sauce                                        6/8 pieces chicken

            Drain juice from pineapple and make up to 1 cup with water
            mix soup, soy sauce and juice...
            Put chicken and pineapple in dish...cut pineapple smaller if liked...
            Pour over liquid...
            Cook 1hr@350F...180C...
            Stir during cooking...
 

I usually have Savoury rice with this and a green vegetable ...


Savoury Rice

            Butter or oil..I don't usually use any...            ¾pint chicken stock
            6ozs long grain rice                                        bay leaf

            Cook rice in butter or oil for 2min, add stock and bay leaf.
            Bring to boil and simmer 15/20min till liquid absorbed...
