Getting Kids to eat is a feat all unto itself..I have included on this page recipes that I know kids will eat because I have three of the pickiest eaters in the world
Potato Chip Chicken Fingers
1 whole boneless skinless chicken breast
5 to 6 ounces of potatoe chips, plain, barbecue, or sour cream
1 egg
2 tablespoons of milk
Preheat the oven to 400 degrees.
Cut the chicken into finger-sized pieces.
Fill a large sealable pplastic bag with the chips.
Seal the bag and crush the chips.
In a small bowl, whisk the egg and the milk.
Dip the chicken into the egg mixture, then into the bag.
Shake gentley to cover.
Place on an ungreased cookie sheet.
Bake for 20 minutes, flipping once during the cooking time.
Serve with bbq sauce, salsa or honey mustard dip
Chocolate Lovers Brownies
1 cup of unsalted butter
8 ounces of semisweet chocolate
4 ounces unsweetened chocolate
4 eggs
3/4 cups firmly packed brown sugar
3/4 cups of white sugar
2 teaspoons of vanilla extract
1 cup of all purpose flour
1/4 teaspoon of salt
2 cups of chopped walnuts ( optional )
Preheat oven to 350 degrees and grease a 13x9-inch baking pan
In a large microwave-safe bowl, heat the butter and the chocolates on hight for 1-3 min, or until the chocolates are melted, stirring halfway through cooking.
Let stand for 10 min.
In a large bowl, using an electric mixer, beat the eggs and the sugars for 3 min, or until blended.
Beat in gthe chocolate mixture and the vanilla until blended.
Mix in the flour and the sult until just combined.
Using a wooden spoon mix in the nuts if desired
Scrape the batter into the prepared baking pan.
Bake for 28-30 min or until a knife inserted comes almost clean
