Banana Bread

3/4 cup of sugar
1 1/2 cups mashed bananas (3 large)
3/4 cup vegetable oil
2 eggs
2 cups all-purpose flour
1/2 cups chopped nuts
1 tsp baking soda
2 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt

1. Heat the oven to 325 degrees F.
2. Grease a loaf pan (either 9x5x3 or 8 1/2 x 4 1/2 x 2 1/2 inches) with shortening, using a pastry brush.
3. Mix sugar, bananas, oil, and eggs in a large bowl. Stir in remaining ingredients. Pour into pan.
4. Bake until a toothpick inserted in center of the bread comes out clean, about 60-70 mins. Let cool 10 mins, then loosen sides of loaf from pan and remove from pan. Let cool completely before slicing. Makes 1 loaf.
