Pepper Steak With Rice
1 pound lean beef steak, 1/2 inch thickness
2 tablespoons margarine Garlic Powder 1 (10 ounce) can of beef broth 1 cup sliced green onions, including tops 2 green peppers, cut into strips 2 tablespoons cornstarch 1/4 cup water 1/4 cup soy sauce 2 large, fresh tomatoes (cut into wedges) Cut meat into 1/4 inch wide strips. In large skillet, brown meat in melted margarine. Add garlic powder and beef broth. Cover and simmer 15 minutes. Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook and stir until thickened. Add tomatoes and stir until heated; serve over rice.
Cabbage Rolls
12 Cabbage leaves 1 pound of lean ground beef 1/2 pound of ground pork 1/2 cup rice, long grain 1 onion chopped 2 eggs beaten 1 teaspoon salt 1/2 teaspoon pepper 1 large onion sliced Sauce (Sweet & Sour) 1 can of tomato soup, mixed with 1/4 cup water 1 can of stewed tomatoes 1/3 cup lemon juice 1/8 teaspoon pepper 1/4 cup brown sugar Add cabbage leaves to boiling water. Simmer 4 minutes until leaves are pliable. Remove and drain. Combine beef, pork, rice, onion, eggs, salt and pepper. Divide meat mixture into 12 balls and place in center of cabbage leaves. Fold sides over stuffing and fasten with toothpicks. Preheat oven to 375 degrees. Place cabbage rolls in a greased 3 quart casserole. Add onion slices and pour sauce over rolls. Sprinkle with brown sugar and cover. Bake, covered for 1 1/2 hours - 2 hours This can be served with sour cream on top
