Banana Bread


4 tsp. butter
1 cup brown sugar
1 egg
3 bananas, mashed
1 1/2 cups flour
1 tsp. salt
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. baking powder

Mix all ingredients together. Grease loaf pan; pour in mixture. Bake at 350 degrees for 1 hour.

Berry Layer Muffins


1/3 cup margerine
2/3 cup brown sugar
2 eggs
3/4 cup milk
1 tsp. vanilla
2 cups flour
4 tsp. baking powder
1/2 tsp. salt
berries

Cream margerine, add brown sugar, eggs, milk and vanilla. Add dry ingredients. Line or grease muffin tins. Fill tins half full, arrange berries on top. Add batter on top of berries to fill tins. Bake at 375 degrees for 20-25 minutes. cool.
*optional* sprinkle muffins (before cooking) with mixture of 1 tsp. cinnamon and 2 TBSP of white sugar
Use your Favourite berries, I always use fresh cranberries.

Banana Chocolate Chip Muffins


3 Large Bananas
3/4 cup white sugar
1 egg
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all purpose flour
1/3 cup melted butter
3/4 cup chocolate chips

Mash Bananas; add sugar and slightly beaten egg. Add melted butter; add dry ingredients and chocolate chips. Bake at 375 degrees for 20 minutes.

Bread Pudding


2 eggs
1/2 cup brown sugar
1/4 tsp salt
1 tsp cinnamon
2 cups hot milk
1 TBSP butter, melted
2 cups buttered bread, broken into pieces
1 tsp vanilla

Beat eggs well; add sugar, salt, cinnamon and milk, beat until very smooth. Add butter, bread pieces and vanilla. Pour into buttered baking dish and bake at 325 degrees for about 45 minutes.
