Pork Roast with Raisin Sauce

Pork Roast Ingredients:
   2-4 lbs. boneless pork loin roast   1 t. salt
   1/2 t. ground cinnamon              1/4 t. garlic powder
   1/4 t. pepper                       Raisin Sauce

 Directions: Place pork, fat side up, in shallow roasting pan. 
Mix spices together and sprinkle over the pork. Insert meat
thermometer so the tip is in the middle of the thickest part of
the meat. Roast uncovered at 325* until pork is at 170*, or 
about 2 hours. Prepare Raisin Sauce and serve over pork.

Raisin Sauce Ingredients:
    1 1/2 C apple juice                1/2 t. ground cinnamon
    1 1/2 C raisins                    1 t. cornstarch
      1/4 C maple syrup                2 T cold water

 Directions: Heat apple juice, raisins, syrup and cinnamon to
boiling, stirring occasionally. Reduce heat. Simmer until raisins
are plump and tender, about ten minutes. Mix cornstarch and water
then stir into raisin mixture. Heat to boiling, stirring 
contstantly. Boil and stir for one minute. Serve over pork.
