1 cup grated carrots
1/2 cup crushed pineapple or honey
1/4 cup water
1/2 cup chopped dates
1 tsp. almond extract
2 cups coconut
1/4 cup whole wheat pastry flour
1/2 tsp. sea salt
Mix first 5 ingredients. Add coconut, flour and
salt. Let
stand for 10 minutes. Drop by rounded tsp. on cookie
sheet
and bake for 30 minutes at 325.
