Vegetarian Chow Mein - from Pat

1 onion (chopped)
3 stalks of celery (chopped)
2 cups mushrooms (fresh or canned)
1 cup firm tofu (cubed)
3 cups whole grain flat noodles
1 cup cashews (rinsed and roasted)
3 Tbsp. onion powder
3 cups mushroom soup
2 tsp. salt

Saute onion, celery and mushrooms in 3 Tbsp. oil and 3 Tbsp. water. Add tofu. Add remaining ingredients and pour into a casserole dish. Bake at 350 for 25 minutes.
