Cashew Banana Cream Pie - from Pat

3/4 cup cashews
1 1/2 cups water
18 dates
3 bananas
1 1/2 tsp. vanilla
1/2 tsp. salt
1-3 Tbsp. cornstarch
1 pre-baked pie shell
1/2-3/4 cup coconut

In blender, blend cashews with 1 cup of water until smooth. Add 1/2 cup water and all remaining ingredients except bananas and pie shell. Blend until smooth. Add 1 more cup water and blend thoroughly. Cook over low heat until mixture thickens. Cool. Slice bananas and place 1 layer on baked pie crust. Cover with 1/2 the cooked filling. Add another layer of bananas, then add rest of filling. Sprinkle with coconut and chill.
