Yam Pie - from Pat

2/3 cup soy milk
1/2 cup pure maple syrup
1 cup cashews
2 tsp. vanilla
1/2 tsp. sea salt
2 tsp. egg substitute
2 cups yams (cooked)
1/8 cup light molasses or 1/2-2 Tbsp. blackstrap
pinch of cardamom

In blender, mix soy milk, maple syrup and cashews until smooth. Add remaining ingredients and blend. Pour into pie shell and bake at 350 for about 40 minutes. Refrigerate. It will thicken more as it cools. Top with soy cream or non-dairy creamer.
