Cabbage Soup - from Rick

1 medium cabbage (chopped)
2 carrots (sliced thin)
2 potatoes (sliced or cut small)
1 onion (chopped)
2-3" long pieces of linguica (or other sausage) sliced thin
4 cups water (add more as needed)
1 can beef or chicken broth

Saute linguica and onion slightly (do not brown) in 2 Tbsp. oil. Add water and cabbage and bring to a boil. Reduce heat and cook 10-15 minutes. Add the rest of the ingredients. Cook until all vegetables are tender. Use low heat. If it sits for at least an hour, it has a better flavor. (Sliced mushrooms can be added if desired.)
