Marinated Vegetables - from Eve
(This makes so much you need a punch bowl to put it in - or my daughter made it in a white kitchen trash bag (sounds awful, but it is clean) to have enough room to stir it around occasionally. You can keep it for a week or so. Great for a crowd.)
1 head cauliflower (cut up)
1 head broccoli (cut apart into bite-size pieces)
1 lb. carrots (sliced)
1 or 2 stalks celery (stalk, not the whole bunch)
(sliced)
12 oz. fresh mushrooms (cut up)
1 zucchini (unpeeled, sliced)
Marinade
1 1/2 cups olive oil
1 cup apple cider vinegar
2 tsp. pepper
1 Tbsp. accent
3 Tbsp. sugar
3 tsp. dill seed
1 tsp. dill weed
1 Tbsp. McCormick garlic salt
1/2 tsp. salt
Mix marinade ingredients together. After vegetables are all cut up, add marinade and refrigerate at least 24 hours. Stir occasionally.
