Salads

 

Oriental Chicken Salad - from Deni

2 cooked chicken breasts (large, whole,skinless, boneless, chopped)
1 large head cabbage (thinly sliced)
1 bunch (or 2) green oniions
4 Tbsp. toasted sesame seeds
4 Tbsp. toasted slivered almonds
3 pkgs. Top Ramen Noodles (uncooked)

Place chicken, cabbage and onions in a bowl. Mix sesame seeds, almonds and noodles in a separate bowl. Do not mix into salad until ready to serve.

Dressing

2 Tbsp. sugar
1/2 cup salad oil (this and sugar may be doubled)
1 tsp. salt
1/2 tsp. pepper
6 Tbsp. Japanese rice vinegar or rice wine vinegar (not the light stuff)
2-3 tsp. lemon juice
4 Tbsp. sesame seed oil

Mix ingredients. Do not mix into salad until ready to serve. When ready to serve, mix salad, dry ingredients and salad dressing.
