Banana Cake - from Autumn

2 cups flour
1 1/2 cups sugar
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1 cup mashed ripe bananas
1/2 cup buttermilk or sour milk (ad 1/2 tsp. vinegar to regular milk)
1/2 cup shortening
2 eggs
1 tsp. vanilla
1/2 tsp. salt

Heat oven to 350. Grease and flour two round cake pans. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Add bananas, buttermilk, shortening, eggs and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 3 minutes. Pour batter in pans. Bake at 350 for 30-35 minutes or until a toothpick comes out clean. Cool on racks 10 minutes. Remove from pans and oool completely on racks. Frost with vanilla, banana cream or cream cheese frosting.
