Potunas - from Happyeve

4 large potatoes
1 large can tuna, drained or 2 (7 oz.) cans
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped pimento
1/2 cup grated cheddar cheese
1 cup Hellman's mayonnaise
slices of Velveeta cheese

Bake potatoes at 350 for 45 minutes to 1 hour, till done. Remove from oven and cut in half lengthwise. Scoop out insides of potatoes and combine with next 6 ingredients. Mix well, mashing up potatoes as well as you can without a mixer. Spoon mixture back into 8 potato half skins. Top each with Velveeta cheese. Return to oven and bake 5 to 10 minutes, just until warm and cheese on top is melted.
