Minute Steak Stir Fry - from Eve

4 cube steaks or minute steaks broken up - I break them up by hand and remove gristly parts.)
1/4 tsp. garlic salt
1/4 tsp. powdered ginger
1/4 cup oil
2 green peppers (cut in strips)
1 cup sliced celery
2 Tbsp. cornstarch
1/2 cup cold water
6 Tbsp. soy sauce
2 tomatoes (cut in 16ths or choppped in large pieces)

Season broken up meat with garlic salt and ginger. Heat 1/2 the oil; add meat and brown quickly on all sides. Remove meat. Add remaining oil. Heat. Add peppers and celery; cook just till slightly tender (about 3 minutes). Mix cornstarch, water and soy sauce. Add to skillet; cook and stir till mixture thickens. Stir in meat and tomatoes; heat just until they are warmed through. Serve over hot cooked rice. Pass additional soy sauce.
