Tomato Salsa - from Steve

2 large ripe tomatoe (peeled, seeded and diced) (3 cups)
1/2 cup low sodium tomato sauce
3 green onions, including tops (finely chopped) (1/3 cup)
3 Tbsp. fresh cilantro (coriander) OR 3 Tbsp minced parsley and 1 1/2 tsp. dried cilantro
1 medium jalapeno pepper
1/2 tsp. salt (optional)
1 Tbsp. red wine vinegar (optional)

Mix all ingredients and chill. (It will keep for about two days. You can experiment with the amounts. I usually put a little more jalapeno in it. This is great for the tomato season. You may never buy Salsa again after trying this.)
