Great Grilled Chicken - from Don
1 whole fryer (cut up)
(or equivalent amount of your favorite pieces)
1/2 cup soy sauce
1/4 cup dry sherry
2 Tbsp. canola oil
2 cloves garlic (minced)
1 tsp ground ginger
1/4 tsp. nutmeg
1/2 tsp. pepper
Rinse chicken in cold water and pat dry with a paper towel. Place chicken in recloseable plastic bag. In a jar with a lid, put soy sauce, sherry, oil, garlic, ginger and nutmeg. Shake well. Reserve half to use as sauce. Pour remainder of mixture over chicken. Close bag securely and toss to coat well. Refrigerate for 20 minutes. Fire up the grill. Drain chicken. Discard leftover marinade from bag. Sprinkle chicken with pepper. Place on hot grill (about 5 inches above heat). Cook for 40-45 minutes or until done, turning often. In a small saucepan, heat reserved sauce. Remove chicken from grill and serve with heated sauce and grilled vegetables. Fruit salad is a nice touch. Tip: To save grilling time, cook chicken in 350 oven for 30 minutes while the coals are heating, then transfer to grill to finish cooking. Refrigerate leftovers, or better yet, have company over and eat it all!
