Spanish Saffron Fish - from Eve
(Spanish Saffron is red and stringy looking and is found in a small jar on the spice shelf. It is very expensive, but when you total the cost of fish, vegetables and rice, this is still an inexpensive meal.)
3 Tbsp. olive oil
1 lb. cod (or your favorite fish)
1 zucchini (chopped in large pieces)
1 green pepper (chopped in large pieces)
4 green onions (sliced, use green also)
1 large or 2 small garlic cloves
2 tomatoes (seeded & chopped in large pieces)
Spanish Saffron (use whole jar - is usually only
about a Tbsp. full.)
salt & pepper
Heat 3 Tbsp. oil. Add zucchini, green pepper, green onions, garlic, salt and pepper. Cook about 5 minutes. Add tomatoes and saffron. Heat. Add fish. Cover and cook 8 or 10 minutes. Check seasonings. Serve over cooked rice. (That aroma of saffron throughout the house is sooooo good. Different than anything I had ever had before.)
