Herman

Herman is a sort of sourdough type mix.

1 pkg. Dry Yeast
2 cups lukewarm Water
2 cups Flour
In a glass or plastic container, disolve yeast in warm water. Add flour and beat till smooth. Cover and let stand at room temperature 48 hours. This makes two cups starter.
Use one cup of Herman and give the other cup to a friend.

Care of Herman
To one cup of starter, feed:
1/2 cup Sugar
1 cup Flour
1 cup Milk
Stir throughly. Stir Herman again on the second, third and fourth days.
On the fifth day, feed Herman again: 1/2 cup Sugar
1 cup Flour
1 cup Milk
Stir and set aside, stiring again on the sixth, seventh, eighth and ninth days.
On the tenth day Herman is ready to be made into coffee cake, rolls, or bread.


Herman starter is allowed to stand 48 hours at room temperature.
When feeding begins Herman should be refrigerated.
Herman has been left to set at room temperature for a few days and it did not spoil,
but it should be refrigerated.
A cup of Herman dough added to biscuit mix makes delicious biscuits.
Herman was sat at the back of the refrigerator, almost a year.
Started feeding him again and had good results.
Herman works almost the same as sourdough starter, and has been kept going for over 10 years.


Herman Coffee Cake

2 cups Herman Starter
2 cups Flour
1 tsp. Salt
1/2 tsp. Baking Soda
2 tsp. Baking Powder
1 1/4 tsp. Cinnamon
1 tsp. Nutmeg
1 tsp. Ginger
1 cup Sugar
2 Eggs
2/3 cup Oil
1 cup Nuts (chopped) and/or Raisins (optional)
Combine Herman and flour, salt, baking soda, baking powder, spices and sugar. Beat eggs in with an electric mixer. Add nuts and raisins. Pour into a greased 9x13 inch baking pan and sprinkle with topping (recipe follows). Bake at 350 degrees for 30 to 40 minutes or until done.
While cake is baking prepare Glaze and pour over hot Herman Coffee Cake when it is taken from oven. Cool in pan.
*If desired 1/2 cup Honey can be substituted for 1 cup Sugar, and Whole Wheat Flour can be substituted for the Flour. Also add spices according to taste.

Topping

1 Tbls. Flour
1/2 tsp Cinnamon
1/2 tsp. Ground Cloves
1/2 tsp. Ginger
1 tsp. Nutmeg
1/2 cup Margarine (melted)
1 cup Brown Sugar
Combine all ingredients and sprinkle over batter before baking

Glaze

3/4 stick Margarine
1 cup Brown Sugar
1/2 cup Milk
1 tsp. Vanilla
Powdered Sugar to sprinkle on top
Melt margarine, add brown sugar, milk and vanilla.
Bring to a boil and cook for five minutes.
Pour over hot cake.
Sprinkle with powdered sugar.


Herman Bread

1 cup Herman starter
2 cups Flour
1 tsp. Baking Powder
1 pkg Yeast (disolved in 1/2 cup warm water)
1 tsp. Salt
1/4 cup Oil
1 Egg (optional)
Mix all ingredients. Dough will be sticky. Let dough rise until double, about an hour. Kneed 8 to 10 minutes adding a small amount of flour as needed. Form into a loaf or rolls and let rise until double. Then bake at 400 degrees until done; 15 to 20 minutes for rolls and 30 minutes for a loaf.
The texture of this bread is better than regular yeast bread.


Herman cookies

1/2 cup Shortening
1 1/2 cups Brown Sugar
1/2 cup Buttermilk
2 Eggs
1/2 cup Herman Starter
1 tsp. Salt
1/2 tsp Allspice
2 cups flour
1 tsp. Soda
1 tsp Baking Powder
1 tsp. Cinnamon
3 cups Quick Cooking Oats
1 cup Raisins (optional)
1/2 cup Nuts
Cream shortening and sugar together. Add buttermilk and eggs, mixing well. Stir in Herman. Sift dry ingredients and mix into shortening mixture. Stir in Oats, raisins and nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 degrees 10 minutes.


Fruit Muffins

1 1/2 cups White or Wheat Flour
1/2 cup Sugar
1 tsp. Salt
1/4 cup Dry Milk Powder
1 1/2 tsp. Soda
1 cup Raisins or Bluberries
1/2 cup Melted Shortening
2 Eggs
1 cup Herman Starter
Mix dry ingredients. Add fruit, stir shortening, eggs and Herman starter ito dry ingredients. Spoon into greased muffin tins and bake at 350 degees for 20 minutes or until golden brown. Makes 22 large muffins.


Herman Banana Bread

1/2 cup Shortening
1 cup Sugar
1 Egg
1 cup Herman starter
1 cup Bananas, mashed
2 cups Flour
1 tsp. Salt
1 tsp. Baking Powder
1/2 tsp. Soda
3/4 cup Nuts
Cream shortening and surgar. Add egg and beat well. Stir in Herman starter and mashed bananas. Sift dry ingredients and add to mixture. Stir in nuts. Pour into a greased loaf pan and bake at 350 degrees for 65 minutes. Cool before slicing.
