1 lb dry black-eyed peas
8 cups water
½ lb. Bacon, diced
1 med. Onion, chopped
1 clove Garlic, minced
1 Bay Leaf
2 tsp. Salt
¼ tsp. Pepper
¼ tsp. crushed Red Pepper
1 cup uncooked Rice
Bring peas to a boil in water, reduce heat to low and simmer for two minutes. Remove from heat and cover. Let stand one hour. Stir in bacon, onion, garlic, bay leaf, salt, pepper, and red pepper.
Over medium heat, bring to boil, reduce heat to low and cover. Let simmer for 20 min. or until tender. Stir in rice, cover and simmer 15 min. more, or until rice is tender. Serve hot. Makes about 11 cups.
