Cream Cheese Muffins

[Each recipe makes 12 muffins]
8 oz. Cream cheese, softened
1/4 cup softened butter
1 egg, slightly beaten
½ cup milk
1 ½ cup flour
½ cup sugar
3 tsp. baking powder
½ tsp. salt
1/2 tsp. vanilla (opt.)
Beat cream cheese; add butter and mix well. Stir in beaten egg and milk till blended; mixture does not have to be smooth. Combine dry ingredients and fold into the cream cheese mixture, only until moistened. Spoon into paper lined muffin pan. Bake 20-25 minutes at 400o or until light golden.

Strawberry Muffins

1/2 cup butter, softened
3/4 cup sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 teaspoon vanilla
1-1/2 cups chopped strawberries *
3 teaspoons sugar
1/2 teaspoon cinnamon
Cream butter and 3/4 cup sugar. Add egg; beat well. Sift flour, baking powder, and salt together in separate bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries. Spoon batter into muffin pans. Combine cinnamon and 3 teaspoons sugar; sprinkle over batter. Bake at 400 degrees for 20 to 25 minutes.
*I wash the strawberries and put them in a food processor.. just pulse a couple of times and they are chopped perfect.
