~*~*~Broccoli Cornbread~*~*~
Ingredients
1 - 81/2 oz box of Jiffy Corn Muffin Mix
1 stick of margarine
1 pkg. 10 oz. chopped broccoli (thawed/drained)
1 onion chopped
1 c. grated sharp cheddar
4 lg. eggs, slightly beaten
Combine all ingredients. Pour into a large hot cast iron skillet that
has been greased with 2 T. of oil.
Bake 350 for 40-50 minutes.
This is SOOOOOO easy, fast, yummy and FATTENING!! Cooking in the skillet
gives it a crunchy outside. All Southern women have a variety of sizes
of black iron frying pans or they are not real women!! As a Yankee
transplant I had to learn the art of cooking in one of those frying pans
- I was used to the kinder, gentler world of electric frying pans when I
first moved here - LOL. I can make a meal on this cornbread and a glass
of milk or couple it with some pinto beans and could entertain the
President. I rarely make it anymore though because I have no self
control when it is sitting in front of me. Now only make it if there is
a crowd or going to take it to school.
