MEXICAN CORN BREAD
This is easy to prepare. The degree of "hot" can be changed to please everyone's tastebuds. All that's needed as an accompaniment is a tossed salad and a green vegetable.
INGREDIENTS
1-1/2 to 2 lb. Ground beef
1 large onion, chopped
2 or 3 jalapeno peppers, chopped
1 c. Velveeta cheese, chopped
1 box instant corn meal (or use your favorite recipe)
1 can creamed corn
Mix corn bread recipe; pour 1/2 in greased baking dish. Over this, scatter ground beef; over beef, scatter peppers, then cheese, followed by creamed corn. Pour rest of corn bread mixture over corn. Bake at 350 degrees for approximately 1-1/2 hours or until done. Hint: Pepper cheese can be used in recipe.
