Chow Chow

INGREDIENTS:

  1. 1 doz. Medium onions
  2. 1 doz sweet green peppers
  3. 1 dos sweet red peppers
  4. 4 qt. Chopped cabbage
  5. 2 qt. Chopped green tomatoes
  6. 1/2 c. salt
  7. 5 c. sugar
  8. 4 Tbsp. Ground mustard
  9. 4 Tbsp. Mustard seed
  10. 1 Tbsp. Turmeric
  11. 1 Tbsp. Ground ginger
  12. 3 Tbsp. Celery seed
  13. 2 Tbsp. Whole mixed pickling spices, tied in bag
  14. 2-1/2 qt. Vinegar

 

Chop onions and peppers fine. Combine all vegetables and mix with salt. Let stand overnight. Drain well. Combine sugar, spices, and vinegar. Bring to boiling point and simmer for about 20 minutes. Add other ingredients and simmer to consistency desired. Remove spice bag. Pack into hot sterilized jars and seal.
