Cheese Puffs

Fast and easy to make

1 cup flour
pinch of salt
2 tsp. baking powder
1 1/2 cups of grated cheese
1 egg in a 1 cup measure and beat
(cayenne pepper optional to taste)

Fill 1 cup measure that egg is in with milk, mixing well. Mix all other ingredients together making a soft dough. Drop in muffin tin. Bake at 350 F for 15 minutes.

Cheesies (or Cheese Crackers)

8 oz. container of Imperial Cheese(soft, sharp flavoured cheese)
1 cup of flour
1/2 tsp. salt
1/2 cup butter or margarine
1/4 tsp. Worcestershire sauce
1/2 cup of Rice Krispies Cereal
1/4 tsp. Tabasco sauce

Soften cheese and butter and mix very well. Slowly mix in flour, Rice Krispies and seasonings. Mix well. Chill 1 hour. Roll into small balls, place on greased cookie sheet 1 inch apart. Flatten each ball with a fork. Bake at 350 F for 15 minutes.

Des Crépes

This is a french recipe for pancakes. When I was little and my mom said how about pancakes, this is what she made.

2 eggs
2/3 cups milk
2 tbsp. oil
salt
1 cup flour
2 tsp. baking powder

Mix all ingredients together until smooth batter. Should be thinnner then usual pancake batter. Adjust batter by adding more liquid or more dry ingredient. In a heated pan, pour some batter in, spreading it quickly to make a thin pancake. Cook a few minutes until top looks dry. Then turn over for a few minutes until a bit golden. Remove from pan and roll, if not going to be eaten right away.

Top with butter and maple syrup!.......Yummy! Other toppings mom used to put on them are : brown sugar, cheese whiz, butter and jam. Use your imagination. Fresh fruit is good too.
