Layered Lemon Desert


First Layer

1 cup flour
1/2 cup butter or margarine
1/2 cup finely chopped pecans

Second Layer

8 oz. cream cheese, softened
1/2 cup icing sugar
1/2 cup whipping cream

Third Layer

1 pkg. Lemon pudding/pie filling

Fourth Layer

1 cup whipping cream
(vanilla, sugar) optional

First Layer: Mix flour, margarine, and nuts together until crumbly. Press into 9 x 13 pan. Bake in 350 F oven for 15 minutes. Cool.

Second Layer: Beat cheese and icing sugar together well. Beat whipping cream until stiff. Fold into cream cheese mixture. Spread over cooled crust.

Third Layer: Prepare lemon pudding according to directions on package. Cool, stirring often. Pour over cheese layer.

Fourth Layer: Beat cream, sugar and vanilla until stiff. Spread over lemon layer. Garnish with chopped or slivered almonds.

This is a very nice "light" desert. This is good to serve after a large meal. (I did not say low-fat though).
