1- 1 lb. can red salmon
4 beaten eggs
2/3 c. crushed (fine) soda crackers
1 med/lg onion, finely diced
1/2 tsp. salt
2 tb. olive oil
1/4 tsp. pepper
Shape into patties and roll in 1/3 c. fine cracker crumbs. Place 2 tb. olive oil in large skillet. Heat over med heat. Place patties in fry pan, allow to brown on both sides for 10 to 15 minutes.
I like to serve these with fluffed minute rice, soy sauce and a tossed salad.
