2 cans Hunt's Diced Tomatoes
1 small onion (diced fine)
1 small bell pepper (diced fine)
4 mushrooms (sliced, optional)
1 1/2 tsp. Italian seasoning
1/2 tsp. garlic powder
Stale bread (about 6 pieces, toasted and crumbled)
4 oz. shredded cheddar cheese

Mash tomatoes into very small pieces. Add onion, peppers, mushrooms and spices. Mix well. Add enough bread until the mixture is a relatively thick consistency. (This was my Mom's invention and she never wrote down the specifics before she passed away. These are all just guestimates.) Bake in a preheated 400 degree oven until it becomes firm...probably 30 minutes or so. Top with cheese and return to oven until melted and bubbly.
