Aunt Jane's Carrot Cake
2 cups self-rising flour
1 1/2 cups oil
2 cups shredded carrots
1 small can pineapple
2 tsp. cinnamon
2 cups sugar
4 eggs
1 cup sour cream
1/4 cup chopped nuts
Spray round cake pans with cooking spray. Sift flour and cinnamon. Combine eggs, sugar and oil. Beat very well. Add to flour mix. Beat well. Fold in remaining ingredients. Bake 1 hour in a preheated 325° oven. Allow to cool completely and frost with cream cheese icing.
