Chicken Creole
1 clove garlic, minced
1 pkg. frozen Seasoning Blend
1 (16 ounce) can tomato sauce
1 can Mexican Ro-Tel
1 bay leaf
1/8 teaspoon cayenne pepper
4 skinless, boneless chicken breasts
Lay chicken in the bottom of a 4 quart or larger crockpot. Sprinkle Seasoning Blend on top. Pour tomato sauce and Ro-Tel over all. Add bay leaf and sprinkle with cayenne pepper. Cook on low 8 hours. Remove chicken from crockpot and shred with two forks. Return to sauce and serve over hot cooked rice.
Note: If you prefer, you can substitute your own onions, celery and bell pepper for the Seasoning Blend. Chop 3 ribs celery, 1 onion and 1 bell pepper.
