Cranberry White Chocolate Chunk Cookies
2/3 cup butter flavor Crisco shortening
2/3 cup brown sugar
2 eggs
1 1/2 cups old-fashioned oats
1 1/2 cups self rising flour
1 1/4 cups Craisins
2/3 cup white chocolate chunks (or chips)
Preheat oven to 375°F. Beat shortening and sugar together until light and fluffy. Add eggs, mixing well. Combine oats and flour. Add to shortening mixture, in several additions, mixing well after each addition. Stir in Craisins and white chocolate chunks. Drop by rounded teaspoonfuls onto greased cookie sheets Bake 10-12 minutes or until golden brown. Makes about 2 1/2 dozen.
Note: I've found the very best way to make cookies is on a baking stone. I don't sell Pampered Chef products, but I highly recommend their baking stones for cookie making!
