Old Fashioned Chicken and Dressing
1 skillet cornbread, crumbled
1 large onion, diced
4 ribs celery, diced
1/4 cup (more or less to taste) rubbed sage
2 cups chicken or turkey, chopped small
5 cups chicken broth
3 eggs, beaten
In a large bowl, combine cornbread with all ingredients. Mix very well. You may add more or less chicken broth depending on the consistency you like dressing. If you like it more like cornbread, add less. If you like it not so dry, add more chicken broth. Pour into a greased 9"X13" casserole dish. Bake in a preheated 375° oven 45 minutes to 1 hour.
