Low-Fat Belgian Waffles


2 cups all purpose flour
1 Tbsp. + 1 tsp. baking powder
1/4 tsp. salt
3 Tbsp. sugar
1 1/2 cups skim milk
1/2 cup egg substitute
1/4 cup fat free butter (I Can't Believe It's Not Butter Spray)
1 tsp. vanilla extract


Combine first 4 ingredients. Combine milk, egg substitute, butter and vanilla. Stir well. Add to flour mixture. Beat at medium speed with a mixer until well blended. Coat waffle iron with cooking spray and pour about 1/4 cup batter on at a time. Serve with fresh fruit topping or powdered sugar.
